Days are getting shorter and nights are getting colder. The need for a filling, delicious meal is all the more important. A great winter dish to cook in winter, is sweet and sour chicken, so here's the recipe.
Sweet and sour chicken
Ingredients:
3 mixed coloured capsicums
439 grams of pineapple chunks
1 Tablespoon oil
350 grams of chicken tenderloins
520 grams sweet and sour sauce
1 tablespoon of chopped fresh coriander or parsley
Steamed rice or noodles
Method:
Cut capsicums in half and deseed. Cut into thin strips. Then drain pineapple. Heat oil in a heavy based frying pan. Stir fry capsicums over high heat for 2 minutes. And add pineapple and stir fry for 1 more minute . Remove from pan and set aside. Stir Fry chicken for 4 minutes or until cooked. Return the pineapple and capsicum to the pan and add sweet and sour sauce and bring to the boil. Serve with steamed rice or noodles, garnished with coriander or parsley.
